7 Minute Vegetable Soup

1 cup diced onion (fresh or frozen)
2 tsp. minced garlic (2-3 cloves
1 – 15 oz. can tomato sauce
1 – 15 oz. can Italian recipe diced tomatoes
2 cups frozen mixed vegetables (your choice of combination)
1 tsp. dried basil

1. Spray a medium-sized soup pan or large skillet with cooking spray and place over medium-high heat.
2. Add onion and sauté briefly. Add garlic and sauté until both are golden brown.
3. Add tomato sauce, tomatoes, vegetables and basil. Heat until vegetables are cooked. Add water if soup is too thick.
