One Bowl Chocolate Cake

¾ cup plus 2 tablespoons all-purpose white flour
½ cup granulated sugar
1/3 cup unsweetened cocoa powder, preferably Dutch-process
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
½ cup buttermilk
½ cup packed brown sugar
1 large egg, lightly beaten
2 Tbsp. canola oil
1 tsp. pure vanilla extract
½ cup hot strong black coffee
Confectioners’ sugar for dusting, optional

1. Preheat oven to 350 degrees. Lightly oil a 9-inch round cake pan or coat it with nonstick cooking spray. Dust the pan with flour, tapping out the excess.
2. In a mixing bowl, whisk flour, granulated sugar, cocoa powder, baking powder, baking soda and salt. Add buttermilk, brown sugar, egg, oil and vanilla. Beat with an electric mixer on medium speed for 2 minutes. Add hot coffee and beat to blend. (The batter will be quite thin.)
3. Pour the batter into the prepared pan. Bake for 30-35 minutes, or until a skewer or toothpick inserted in the center comes out clean. Cool the cake in the pan on a wire rack for 10 minutes; remove from the pan and let cool completely. Dust the top with confectioners’ sugar before slicing, if desired.
